Malai Ghevar is the most popular sweet of Rajasthani. Ghevar is made in different ways like plain, mawa or malai ghevar. This delicious delicacy is found in all sweet shops across India but the taste of home is always the best. So try you easy and quick recipe of Malai Ghevar.

500 grams flour
1 1/2 liters of water
50 grams sugar
2 pinch saffron
150 grams ghee
1 liter milk
5 grams green cardamom powder
2 ice cubes
20 grams chopped almonds
10 grams chopped melon seeds
20 grams chopped cashew nuts
500 grams sugar
1 pinch saffron
250 ml water
3 cups ghee
Heat ghee in a heavy bottomed pan and when the ghee is hot, turn off the gas and add ice cubes. This will remove the impurities and only pure ghee will be left in the pan. You can also use cow’s ghee.
Beat the ghee and ice well until the texture becomes frothy. Now prepare the batter by adding refined flour to the ghee. Heat ghee in a heavy bottom pan, place a circular mold and start pouring batter in the center, fry till it turns golden brown.
For the syrup, heat the water and sugar until the sugar dissolves completely. Put the fried Ghevar in hot syrup and take it out.
For cream, heat milk, sugar, cardamom powder and saffron and reduce it to half. Allow the cream paste to settle and thicken. Place the cream over the ghevar and garnish with chopped nuts and saffron threads.
